My daughter had so much fun doing this! She even went on to repurpose the rubber bands as bracelets, anklets, and rings which worked even more fine motor skills than I could've imagined!

I suggest using the mini pumpkins for this fine motor activity so they fit in your toddlers hands and you'll be able to find rubber bands that aren't to tight.
For selecting your rubber bands, I strongly encourage you to use a mix of really large ones and medium size ones. Stay away from tiny rubber bands as your toddler will likely pull them at some point and we want to limit the likelihood the rubber bands will become overstretched and snap on our kiddos!
Setup the pumpkin fine motor activity:
Simply take your rubber bands and cover your pumpkin with them. The idea here is more so to have a lot of loose rubber bands that hold each other in place, more so than a lot of tight rubber bands holding themselves in place if that makes sense.
Then give it to your toddler and have them take the rubber bands off! You may need to model the first few for them.
If you're using different types of rubber bands, you could even set up sorting plates for them as they remove the rubber bands. For instance if you're rubber bands are colored, you could give your toddler different colored sorting containers.
Or you can just have your toddler sort them into big rubber bands and small ones.
The last little tip I want to share with you: if you sit and do this activity alongside your toddler (or any activity for that matter) your toddler is far more likely to engage for a longer period of time. If you narrate what they are doing, observe them, etc. they tend to stay more focused versus wondering what you're doing and abandoning after a minute or two.
